Ingredients

    2 cup (not packed) Cottage Cheese, Nonfat
    2.50 cup Milk, nonfat
    4 tbsp Cinnamon, ground
    2 tsp Vanilla Extract
    2 tsp Baking Powder
    2 tsp Baking Soda
    6 tbsp *Flax Seed Meal (ground flax)
    1 cup dry Oatmeal (plain)
    10 large Egg, fresh, whole, raw
    .5 cup Wheat flour, white, all-purpose, unenriched
    2 cup Organic All-Purpose White Flour
    2 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    2 tsp Lemon Juice 'Real Lemon' 100% juice
    .5 cup Coconut Oil

Tips

If your pancakes are too thin, add more flour. You can also use oat bran instead of oatmeal for more fiber.


Directions

Blend milk, cottage cheese and oatmeal in a blender until smooth. Combine all ingredients and cook 1/4 cup at a time on skillet.
* Add mix ins like chocolate chips for kids or blueberries, or nuts with craisins. Get creative!
