Ingredients

    Depending on whether you want an Asian, Mexican or other flair add whatever spices you want to the mixture just as it is done.

    Sliced veggies - eggplant, zucchini, mushrooms, onion, red bell peppers, garlic

Tips

The healthy sauté method uses no oil to cook the veggies, if you want some healthy fat, add a teaspoon or so of extra virgin olive oil to the finished recipe. Add other spices - oregano, basil, pepper, Italian or greek seasoning, adobe or chili seasoning, 5 spice or soy sauce to the sauté just before it is finished.


Directions

Slice lengthwise the eggplant and zucchini. Slice or chop the other veggies.
Heat the broth (1-2 tablespoons) to start and add the eggplant sauté for 3 minutes and add the zucchini and broth if needed for another minute, add the green onion, mushroom and peppers, sauté for another 2-3 minutes until crisp. Add spices or other flavoring and heat through for a minute or so. All should be done in 7 minutes.
Spread hummus on tortilla (this recipe will make 2-3 wraps) - 1 tablespoon per tortilla, spoon in the veggie mixture, top with arugula and roll the tortilla.
