Introduction

Delicious breakfast bread or "dessert"! Delicious breakfast bread or "dessert"!
Number of Servings: 8

Ingredients

    1 cup flour
    1/2 tsp baking soda
    1 tsp cinnamon
    Dash salt
    2 medium very ripe bananas, mashed
    1/3 cup sugar
    1/4 cup applesauce (in place of oil)
    1T flax seed meal with 3 T water (allow to gel in place of egg)
    1.25 cup grated carrot
    1/2 T vanilla
    3 T dessicated coconut
    2 tsp sesame seeds

Tips

This is a really forgiving recipe! If you like more sugar, add it! If you want to mix in some pecans or walnuts, go for it! Add some chopped up raisins or dates! Add some sliced zucchini in place of some of the grated carrot... mix it up!


Directions

Place Flax seed meal and water in cup to gel
Cook a sliced apple in water and mash to create applesauce
Mix flour, baking soda, cinnamon, salt, and dessicated coconut well.
Mix sugar, vanilla, mashed bananas, flax meal mixture, and applesauce
Add the dry ingredients to the wet ingredients
Fold in carrots
Top with 2 tsp sesame seeds
Bake at 350 degrees for 45 minutes or so!
