Ingredients

1 lb lean ground turkey
1/4 cup Italian bread crumbs
2 egg whites
2 cups baby spinach, chopped
3/4 cup fat free mozzarella cheese, shredded
1 tsp Italian seasoning
1/4 tsp garlic powder
1/4 cup marinara sauce
Salt & pepper, to taste
Directions
1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside. Place a roasting rack inside a deep roasting pan and set aside.
2. In a large bowl, combine the turkey, bread crumbs, egg whites and salt & pepper in a bowl. Place the mixture into the prepared baking sheet and pat until it is completely flat.
3. In a separate bowl, combine the spinach, 1/2 cup cheese, Italian seasoning and garlic powder. Mix well and spread evenly over the meat, leaving a 3/4-inch around the sides.
4. Pick up one edge of the parchment paper, and roll the edge over, starting with the short end. Continue to roll, pulling back the parchment paper as you go, until the meat is a firm roll. Press seam down, and lay the roll seam-side down onto the rack over the roasting pan.
5. Bake 50 minutes, or until the roll is cooked through.
6. Remove from the oven. Spread marinara evenly over the loaf and sprinkle with remaining cheese. Return to oven and bake 10 minutes, or until cheese has melted and lightly browned.
