Number of Servings: 6

Ingredients

    One tablespoon Smart Balance Buttery Spread
    One half cup chopped onions
    Two cups fresh, sliced mushrooms
    Three cups diced celery
    One and a half cups low sodium, fat free chicken broth
    One tablespoon sugar
    One half teaspoon salt
    Three tablespoons low sodium soy sauce
    Three tablespoons cornstarch
    Two tablespoons water

Directions

Melt spread on medium heat. Add onions and mushrooms. Cook until soft. Add celery, chicken broth, sugar, salt, and soy sauce. Simmer about 15 minutes, until celery is cooked. Add chicken, (or turkey breast, pork, etc.) Heat until meat is hot. Mix thoroughly cornstarch with water (should be somewhat thin). Add to pot, stirring thoroughly until thickened and clear. Serve with rice or chow mein noodles, if desired. Either of these will add to the calorie count.
