Ingredients

    3 cups chopped succhini
    1 bell pepper
    1 tomato
    1 small eggplant (2 cups)
    1 cup distilled white vinegar
    1/4 cup brown sugar

Directions

Combine all ingredients in saucepan. Mix well. Bring to a boil. Reduce heat and simmer for five minutes, stirring frequently.
