Ingredients
3 Omega-3 large eggs
1/2 c. liquid Egg Whites
2 TB low fat shredded cheese
1 TB 1/3 Less Fat Neufchatel Cream Cheese
Dash each Salt & Pepper
3 100% Whole Wheat Orowheat Sandwich Thins
1 TB Margarine butter blend, 60% corn oil margarine and 40% butter
1 1/2 slices Muenster Cheese,
Tips
For variety, top this with a slice of deli ham, turkey, or a slice of bacon, cut in half.
Directions
Make the egg mixture: Combine the eggs, cheeses, salt and pepper in a blender. Mix. Grease small ramekins about the size of an English muffin in diameter. Pour the mixture evenly between the three.
Bake in microwave for 2-3 minutes, or till done.
Toast the thins and lightly butter each of them, dividing the butter between them.
Top the bottom of each sandwich thin with one of the eggs, then 1/2 slice cheese. Microwave an additional 10 seconds, or till the cheese is slighty melted.
You can also top this with a slice of deli ham, turkey, or a slice of bacon, cut in half.
