Introduction

These are the yummiest, quickest, easiest peppers! If you use pre-cooked packaged rice they are great when you work late! Zucchini can be substituted and is equally as good. Ingredients

    4 oz Soyrizo (vegan chorizo)
    1 cup precooked brown rice
    2 raw bell peppers (or two large zuccini, halved with seeds removed)

Directions

So simple! just mix the soyrizo with the rice, fill the pepper and pop in the oven at 350 degrees for about 1/2 hour, or till peppers (or zucchini) are tender.

    when you don't eat your veggies raw, this is a wonderful change for the palate. i like the nutrition totals, very do-able. and looks like it can freeze well too, for an even more instant dinner when working too late to care to cook. thanks :) - 3/23/07
