Ingredients

    1 28 ounce can diced tomatoes
    1 15 ounce can black beans
    1 15 ounce can golden hominy
    3-4 chicken breasts (bone in but remove skin)
    4 ounces angel hair pasta
    Carrol Shelby's chili Kit

Tips

This will taste so much better the next day that sometimes I purposely make it a day ahead.


Directions

remove skin from chicken and boil with bone in (just enough water to cover) keep water, remove chicken and shred it and return to water. Add tomatoes and Carrol Shelby's Chili kit (can be tailored to suit your taste, but I use all of the kit) simmer chicken with tomatoes for 1 hour or more. Bring up to a medium boil and add uncooked pasta, boil 15 minutes and return to simmer. Add beans and hominy just before serving.

Serving Size: makes approximately 8 cereal sized bowls
