    2 cucumbers, sliced
    7 oz cherry tomatoes, halved
    1/2 med red onion, diced
    1 tbsp. olive oil
    2 tbsp. apple cider vinegar
    salt and pepper to taste


Mix all ingredients and put in refrigerator for at least 1 hour. Stir frequently to marinate.
