Introduction

Although this isn't the most health-conscious food, it is a delicious treat for the whole family. Many of the ingredients can be substituted for those who have food allergies like me. It is difficult to find recipes for some of the allergies that many people have to face, but where there's a will there's a way! I hope everyone enjoys this delicious family recipe! Ingredients

    Mixture 1:

    3 cups mashed sweet potatoes (may use canned)
    1 cup sugar (splenda works as well)
    1/2 teaspoon salt
    3 eggs (or an egg equivalent)
    1/2 stick of margarine, melted
    1/2 cup milk
    2 teaspoons cinnamon

    Mixture 2:

    1 1/2 cups brown sugar, packed
    1 cup flour (can use gluten-free or rice flour)
    1/2 teaspoon baking powder
    1 stick margarine, melted
    1 cup chopped nuts (optional)

Tips

- For those with a lactose intolerance, you can substitute with a variety of products. Lactaid works well, but you can also use rice or soy milk.
- If you are trying to reduce the amount of sugar you can use Splenda or similar sweeteners instead.
- For wheat allergies it is possible to find gluten and wheat-free flour. Rice flour works and tastes good but may require some adjustments.
- For those who are allergic to eggs, or if you are vegetarian, you can find egg alternatives in stores such as tofu.
- It is done cooking when it turns brown!


Directions

- mix all ingredients from mixture 1 together and place in a buttered 9 X 13 casserole dish.
- mix all ingredients from mixture 2 and pour over mixture 1
- cook in 350 degree oven for 30 - 40 minutes or until brown

Serving Size: 9 X 13 casserole dish makes about 12 servings
