Ingredients

    2 boneless chicken breasts, cut into halves
    1/3 c. flour
    1/8 c. corn starch
    5/8 t. baking powder
    1/4 t. salt
    1/4 t. pepper
    1/2 t. garlic powder
    5/8 t. Mrs. Dash original blend seasoning
    1/4 t. Old Bay seasoning
    2 T. olive oil (EVOO if possible)

Tips

Directions

*Beat eggs in shallow dish.
*Mix all dry ingredients in separate shallow dish.
*Heat EVOO in skillet over medium-high heat
*Dredge each chicken breast half in eggs and then in flour mixture.
*Place chicken in pan.
*Reduce heat to medium.
*Cover skillet and let chicken cook for 12 minutes.
*Turn chicken. Let cook for another 12 minutes, or until crust is golden brown on both sides and chicken is cooked thoroughly.
