Ingredients

5 - Poblano Peppers
1 20 oz package of extra lean ground turkey
1 packet taco seasoning
shredded romaine lettuce
1.25 cups of shredded 2% Mexican cheese blend
salsa
sour cream
Tips
The peppers can be made up to two days in advance, if stored in the refrigerator in a single layer. They're much easier to peel when still warm and easier to remove the seeds when cold.
Directions
1. For poblanos: heat broiler and place 4 inches from heat source on a baking sheet. Broil for 15 to 20 minutes until the skin has turned black and begun to peel. It's normal to hear it fizzle and pop. Remove from the oven and place in a bowl until cool enough to handle. Then peel off the skin.
2. Cook the turkey in a skillet, ading taco seasoning once completely cooked.
3. carefully slit each pepper lengthwise to remove the stem and seeds.
4 Assemble each stuffed pepper with 4 oz turkey, shredded lettuce, shredded cheese, salsa and sour cream.
