Introduction

I've played with lots of vegan cheese sauce recipes, from raw cashews to ones with margarine. This one has NO added fat and is DELICIOUS.

I like to serve over whole grain pasta with broccoli and cauliflower, or as a topping to a baked potato.

This is salty, savory, with loads of creamy umami flavor. It's by far my favorite creation I've made as a vegan thus far.

Ingredients

    1 can cannelini beans, drained
    .5 cup canned pumpkin
    .5 cup plain soymilk (or more, to consistency)
    .5 cup nutritional yeast
    2 T Marmite (or more, to taste)
    2 T Dijon Mustard (or more, to taste)
    1 T Onion Powder*
    1 T chopped garlic (or more, to taste)


    *starred items are not included in nutritional breakdown, as there was not spark entry for it. Adds a very negligible amount of calories-- I don't think it really matters.

Tips

Notes:
While I encourage you to play with seasonings-- Please stay true to these ingredients first. YES, you NEED the pumpkin, the marmite, the dijon, and the nutritional yeast to make this taste right. Omitting any of these will drastically change the flavor!


Directions

throw everything in a nutribullet or food processor and blend until very smooth. Add additional seasonings to taste.

Serving Size: makes 6 .5 cup (generous) servings
