Ingredients

    8 Thomas' light english muffins
    1 small carton egg beaters
    1 package kroger turkey sausage patties
    8 laughing cow light garlic cheese wedges
    8 grape tomatos
    5 oz frozen spinach

Directions

Line muffin tin with cupcake wrappers. Cut up tomatos and divide evenly into cups. Thaw spinach and divide evenly into cups. Pour egg beaters over the veggies and bake for 30 minutes in 350 degree oven.

Toast english muffin and microwave 1 sausage patty. Spread cheese on muffin, top with sausage and egg.
