Introduction

Ingredients

1 large 28oz can of peaches drained & mashed
2 c all purpose flour
2 c ideal sugar substitute
2 tsp baking soda
Drain peaches place in a large bowl & mash with hands
Add flour,sugar & baking soda mix well
Preheat oven @ 350*
Grease a 9x13 pan with cooking spray, pour in batter
Bake for approx 30-35 min ( my oven cooks fast so 25 min) or until toothpick comes out clean
Icing Recipe:
3/4 c ideal sugar substitute
1 c shredded unsweetened coconut
8 Tbsp of raw coconut butter
10 oz 2% evaporated milk (2-5oz cans)
1 c chopped pecans
Mix all ingredients except nuts in a saucepan heat until boiling & icing starts to thicken stirring frequently
Remove from heat & stir in nuts
Spread on cooled cake
Tips
I use a fork & lightly pierce cake before icing ;)
