Ingredients



    Cinnamon, ground, 1 tsp
    Ginger, ground, 1 tsp
    Kikkoman Low Sodium Soy Sauce, 1 tsp
    Lemon, juice of half lemon,
    *Hellman's Light Mayo-Olive Oil, 1 tbsp
    DRIED ONIONS, 2 tbsp
    Curry powder, 3 tbsp
    Mushrooms, fresh, 2 medium
    *Chicken Breast (raw, boneless, skinless), 200 grams
    Water, hot, 1/2 cup
    Water, cold 1 tbsp

Directions

Serving Size: Makes 2 servings

Chop chicken into about 1/2" pieces. In a bowl mix lemon juice, curry powder, cinnamon, ginger, soy, mayo, onions and 1 tbsp water. Add the chicken and potatoes and marinate for at least 2 hrs in the fridge, covered.

Chop the mushrooms.

Heat the a frypan and "fry" the chicken mix a few minutes until it's no longer pink. Add mushrooms and onion. "Fry" 3-5 min. Lower the temperature. Add 1 cup boiling water, stir, cover and simmer for 45 min.
