Introduction

This is my lighter version of the traditional Zucchini Boats This is my lighter version of the traditional Zucchini Boats
Number of Servings: 4

Ingredients

    *Turkey, Ground turkey, 93% lean, 16 oz
    Zucchini, baby, 3 large
    (or I used one very large home grown one)
    Salsa, 2 cup
    Onions, raw, 1 small chopped
    minced Garlic, 3 tsp
    Mozzarella Cheese, part skim milk, 4 oz

Directions

*Cook the ground turkey with the onion & garlic. let cool
*cut the zucchini in half & remove the seeds, microwave them for 4-5 minutes until firm/soft
* spray baking pan with olive oil spray, place zucchini in pan
* spoon in meat, cover with salsa.
Bake 350 for 30 minutes
remove from oven, sprinkle with cheese, bake 5 more minutes
