Introduction

These pancakes are the basis for a winning breakfast that won't wreak havoc on your diet! These pancakes are the basis for a winning breakfast that won't wreak havoc on your diet!
Number of Servings: 2

Ingredients

1 1/2 cup self rising flour
    1 tsp sugar
    1 large egg
    1/4 cup milk
    Roughly 1/4 cup water
    Nonstick Spray

Tips

I recommend serving with sugar free jam or no sugar added jam, and I Can't Believe It's Not Butter. If you use syrup, just go ahead and use about 1 1/2 tablespoons of pure maple syrup... The sugar-free syrups just don't taste right, and the crap made with high fructose corn syrup is like diabetes in a bottle. Yuck!

Directions

Spray a frying pan with nonstick spray, and preheat it on low-medium-low. Add dry ingredients to a medium mixing bowl first, then add the egg and milk. Begin stirring, and add water as needed until the batter reaches the right consistency. (It should be a smooth and thick liquid, almost like slow-moving lava.) Spoon batter into the hot frying pan to make large pancakes. Cook for two minutes and then flip. Continue doing so until all of the pancakes are thoroughly cooked. (Depending on the size of your pan, you will probably be able to cook only two or three at a time.)

Serving Size: Makes two servings, three large pancakes each
