Introduction

This amazing salad is good on its own as a side and even better over fresh lettuce with a protein. This amazing salad is good on its own as a side and even better over fresh lettuce with a protein.

Ingredients

    1 1/2 cups corn
    1 green pepped small dice
    1 cup celery diced
    1 cup English cucumber diced
    1/2 c red onion fine diced
    2 large tomatoes diced
    1/2 cup fat free feta cheese crumbled

    Vinaigrette
    1/4 cup rice wine vinegar
    2 tbl lime juice
    1 tsp salt
    1 tsp ground black pepper
    2 tbl eevo
    About 2 tbl fresh basil chopped

Tips

This is has a peppery kick, the black pepper can always be reduced.
This is a great green salad topper, over chicken, or over brown rice. The dressing is sufficient enough for a salad.


Directions

Dice and mix all vegetables
Combine all ingredients for vinaigrette and shake or whisk well.
Combine vegetables with vinaigrette and serve.
