Introduction

A No added sugar, dairy free, Proto Whey Protein packed version of sticky date pudding. A No added sugar, dairy free, Proto Whey Protein packed version of sticky date pudding.

Ingredients

    Wet Ingredients
    210g medjool dates pitted
    5 whole pitted dates set aside
    1cup boiling water
    1/2 cup sugar free maple syrup
    100g babyfood applesauce
    2 tblsp coconut oil
    2 egg whites

    Dry Ingredients
    1tsp baking powder
    1/2 tsp cinnamon
    1/2 cup coconut flour
    1/2 cup quinoa flower
    2 servings vanilla protein powder (i used Proto Whey - 4 scoops)

    Peanut Caramel Sauce (optional - its amazing with or without the sauce)
    5 medjool dates pitted
    1/4 cup boiling water
    1 tblsp sugar free maple syrup
    1 tblsp peanut butter

Tips

To Reduce the Natural Sugar Content simply reduce the amount of Dates Used and Replace with Natural Stevia.


Directions

Placed pitted dates with hot water in a bowl and let sit for 5minutes

Put dates and water into a food processor or blender. Blend until smooth. Add the applesauce egg whites coconut oil and vanilla essence and sf maple syrup and blend again until combined.

In another bowl add quinoa flour, coconut flour, protein powder and baking powder and mix

Add the wet ingredients to the dry ingredients and mix together until smooth. Add the date pieces and mix again

Line a baking tin with baking paper and pour in the mixture.

Bake at 180 degrees celcius for 30-35minutes or until skewer test ready.

Leave to cool for 10 minutes and enjoy!

Peanut Caramel Sauce
place the dates into a bowl with the boiling water and let sit for a few minutes.
Place all ingredients into a food processor or blender and blend until smooth.
