Ingredients

2tsp ground flaxmeal
1/4 c almond milk
1/3 c almond butter
3 Tbsp coconut oil
4 packets Stevia in the raw
1/4 tsp salt
1 tsp cinnamon
1 tsp vanilla extract
1 1/2 cups rolled oats
1/4 c unsweetened coconut
1/4 c dried cranberries
1/4 c dried apricots, chopped
Tips
The original recipe called for raw sugar. Stevia seemed fine with little after taste. I also grind 1/2 c of the oats into flour to give the cookie more body.
Directions
Preheat oven to 325 degrees.
Mix flax meal and almond milk. Microwave to a biol. Cool. Cream together almond butter, coconut oil, and Stevia. Add salt, vanilla, and cinnamon Mix thoroughly. Add oats and stir until combined. Stir in coconut, cranberries, and chopped apricots.
Form 1 inch balls and bake 2 inches apart on greased cookie sheet for approx 15 - 18 min.
