Ingredients

    1 cup flax meal
    1 cup hemp hearts
    2 cups ground almonds
    2 Tbsp baking powder
    1 tsp salt
    1 1/2 cups cocoa powder (unsweetened)
    4 scoops whey protein powder (35g/scoop)
    1/2 cup butter
    1/2 cup coconut oil
    2 cups powdered erythritol
    1 1/2 cups powdered xylitol
    1 Tbsp vanilla
    8 large eggs
    2/3 cup heavy cream
    1 1/3 cups coffee
    40 drops stevia


Tips

Could use all butter instead of half coconut oil, also could use any combination of flax meal/hemp hearts/ground almonds to = 4 cups. or half the recipe (I have a big family).. Good with cream cheese icing or whipped cream.


Directions

Preheat oven to 350. Combine 1st 7 dry ingredients in large bowl. In another bowl, cream butter & coconut oil until fluffy, add erythritol & xylitol and cream together. Beat in vanilla and eggs, then cream, coffee & stevia. Pour into bowl with dry ingredients and mix thoroughly. divide into 3 9x9 baking pans (greased or silicon) and bake for 30 min or until top springs back. Cool on a rack and cut into 36 squares.

Serving Size: Makes 100 20gm pieces (36 per 9x9 pan)
