Ingredients

1 Bell Pepper
1/2 c Chopped White Onion
4 Large Eggs
1/4 c 1% Milk
1/2 c Shredded Cheddar Cheese
Salt, Pepper, Basil, Oregano, and Garlic Powder to taste.
Tips
You could easily add sausage, bacon, ham, or any other veggie ingredients (spinach, tomato, etc.) but you would need to rebuild the recipe for yourself to accurately determine the nutritional and caloric value for each serving.
Directions
I used a muffin tin w/6 sections. To make a regular muffin tin's worth, you would need to double the ingredients. The nutritional information per serving should still remain the same, however.
Spray each tin section w/1 canola oil spray. Chop the veggies and place them in the bottom of each tin (they should not come up more than 3/4 of the way to the top.) Mix the eggs and milk and whisk together. Add all desired seasonings and whisk. Pour mixture evenly over each tin of veggies. Measure out the cheese and sprinkle over the top of each section. Bake in a 350 degree oven for 30 minutes, or until the egg is puffed up, solid, and the cheese is slightly browned.
