    16 oz boneless skinless chicken breast
    8 oz chicken thighs
    1 10 oz can cream of celery soup
    1/2 packet onion soup mix
    2 green bell peppers, chopped
    1 onion, chopped
    2 cups uncooked rice, parboiled kind
    4 cups water
    Salt/pepper to taste


After I mix the rice and chicken together in crockpot, I like to place crockpot on "keep warm" setting for about an hour before eating, especially if you added cold rice.


Place chicken in crockpot. Cover chicken with cream of celery soup, then sprinkle onion soup mix on top. Add chopped bell peppers & onions. Cook on high for 4 hours or low for 6-8 hours.(You can cook rice ahead of time if you prefer and keep in fridge until ready to use.) In a separate pot mix 2 cups uncooked rice & 4 cups water together and cook as directed on rice package. After chicken mixture has cooked in crockpot, shred chicken with fork. Next add cooked rice to crockpot until mixed.

Serving Size: Makes 9 one cup servings
