Ingredients

    2 extra large eggs
    1/2 cup 1% cottage cheese
    1 oz. crumbled feta cheese
    1/4 cup frozen chopped spinach, defrosted and drained

    Beat eggs with cottage cheese until well blended.
    Spray a muffin tin with nonstick cooking spray. ladle egg mixture into sprayed tin, top with spinach, slightly stir into eggs. Sprinkle tops with feta.


Tips

Add ins are too many to mention, change it to lowfat bacon and cheddar, double recipe etc. Cool completely and bag them two to a bag and freeze. Remove from freezer and microwave for one minute for a quick and easy, healthy low carb breakfast. Check out the nutritional content!


Directions

Bake quiches for 20 mins at 350 degree F, until slightly golden and set. enjoy!
