Introduction

This is a fabulous summer pie recipie and easy to make. This is a fabulous summer pie recipie and easy to make.
Number of Servings: 10

Ingredients

    3 Pints (or baskets) fresh Strawberries
    1 cup granulated sugar
    3 tablespoons Corn Starch
    1 table spoon Lemon Juice
    1 frozen ready to back 9 inch pie crust.

Tips

You could put a squirt of whipped cream upon serving but the calorie count here is just for the pie.


Directions

Follow the directions to bake the single pie crust (you only need one) empty. Set that aside to cool.

Wash and hull all the berries. Select the best ones to stand up in the bottom of the pie shell. Slice up the remaining berries and put them in a pot on the stove and smash them up a little.

Mix the Sugar and cornstarch and salt in a bowl. Pour this on the strawberries and cook them down over medium heat until the whole mixture thickens up. The "white" look from the cornstarch will dissipate and the mixture will be glossy and red from the strawberries.

Take the pot off the stove and mix in the lemon juice. Let cool completely !
Then pour this mixture over the whole fresh berries standing in your pie crust and put in the fridge to cool. It is amazing.
