This recipe is super-lean and super packed with protein. A great meal, especially when accompanied by the sauces I recommend (which I added as ingredients to make the nutritional calcs correct). This recipe is super-lean and super packed with protein. A great meal, especially when accompanied by the sauces I recommend (which I added as ingredients to make the nutritional calcs correct).

Ingredients

    1 lb. 99% lean ground turkey breast
    1/2 package (or more to taste) Low-sodium taco seasoning
    2 TBL eggbeaters
    1/2 cup diced tomatos (Hunt's are lowest in carbs), pureed in the Ninja
    1 TBL Hidden Valley Ranch light dressing

Directions

Preheat oven to 350. Combine turkey, taco seasoning, and eggbeaters and mix well. PAM-spray a large cookie sheet and form meatballs about 1-1/2 to 2 inches in diameter. Place on cookie sheet and bake at 350 for about 20 minutes or until golden brown and cooked through. Meanwhile, puree the 1/2 cup diced tomatoes and pour into a custard cup, and into a separate custard cup place your 1 TBL light hidden valley ranch dressing (for 'dipping').
Weigh out an appropriate amount (8 ozs. weighed = 1/2 'lean' plus 1 4 to 6 oz. lean for transition) and enjoy with dipping sauces on the side!
Can be frozen afterwards.

Serving Size: Makes 2 1 full lean servings (weigh out enough meatballs to equal 7 ozs. cooked for each serving).
