Number of Servings: 2

Ingredients

    6 TBSP Unsweetened Almond Milk
    1 TLBS Raw Agave Nectar
1 TLBS Hersey's Cocoa Natural Unsweetened 100% Cacao
Meat of 1 Whole Young Coconut

Tips

If you don't have an ice cream maker and you want your ice cream even "creamier" once it has been frozen break it up into chunks and place them in a food processor and puree until the desired consistency is reached. Be careful not to puree too long as you'll end up with more of a soft serve consistency. This extra step will help break up the ice crystals in order to obtain the creamy smooth consistency of ice cream we so very much love!

Also don't waste the coconut water, set aside for another recipe or drink it! It's nature's Gatorade. Actually it's better. Did you know that the electrolyte balance of Young Coconut Water actually mimics human blood plasma and that in WWII when saline solution was in short supply it was administered through IVs to soldiers to rehydrate them? I don't know about you, but I thought this was pretty cool!

Directions

1) After draining the Young Coconut remove the entire contents of the soft jelly like flesh from the inside.
2) In a food processor combine the Young Coconut Flesh along with other ingredients and puree until smooth.
3a) If you have an ice cream maker, after the mixture is blended, chill for about 1 hour in the freezer and then pour into your ice cream maker and follow the manufacturer’s instructions. Typically this will take about 30 minutes.

3b) If you don’t have an ice cream maker, pour into a Tupperware container and place in the freezer. Be sure to stir it a few times an hour until frozen. This can take anywhere from 2-4 hours. So patience is needed, but so worth the end result.

Viola you have amazing Vegan Ice Cream that was made in 3 easy steps using only 4 wholesome ingredients. This ice cream is not only rich in antioxidants, but you'll also reap the medicinal benefits of the lauric acid derived from the young coconut meat.

Not much of a coconut fan? Don't worry, the taste is completely overpowered by the chocolate. What the coconut meat does is provide the rich creamy base for our ice cream as well as additional nutrition. Enjoy & remember to eat clean whenever possible! Good Luck in the kitchen!
