Ingredients

    15 oz can pure pumpkin puree (unsalted)
    2 large eggs
    1 tsp vanilla extract
    1/4 cup pure maple syrup (or 1/4 cup brown sugar)

    1/4 cup whole wheat flour
    1 cup dry skim milk powder
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1 tsp nutmeg
    1 tsp ground ginger
    1 tsp cardamom
    3/4 tsp allspice
    1/8 tsp cloves

    243g (3 cup) steelcut oats, dry

    1 cup raisins, packed
    90g dark chocolate chips
    90g almonds

    1 cup water

    2g butter (to grease pan)

Tips

These can be eaten as a bar, or warmed and crumbled to serve with milk or yogurt. They freeze well, and make a great meal or snack while travelling.


Directions

Preheat oven to 350 degrees.

Grease 9" x 13" casserole dish with butter.

In large bowl, beat together 2 eggs. Mix in pumpkin, maple syrup, and vanilla.

In separate bowl, mix together flour, skim milk powder, baking soda, baking powder, and spices. Gradually add to pumpkin mixture, mixing well.

Mix in oats, raisins, chocolate chips, and almonds.

Gradually add in water (1/4 cup at a time) until you have a slightly liquid consistency.

Pour entire mix in to greased casserole dish, spreading evenly through pan. Bake uncovered for 40 minutes, or until knife inserted in to centre comes out clean.

Allow to cool slightly, then slice in to 10 "bars".

    Very Good
    We really liked these, easy to make and very filling. We cut the size down to half a serving. They are great for breakfast or dessert, and we plan on taking them on the road as they hold up really well. I think they would be perfect for ATVing. - 5/4/14
