Ingredients

    Benita Instant corn masa flour, 1.25 cup
    Baking Powder, 1 Tbsp
    Flax Seed Meal 1 tbsp
    Water, tap, 3 Tbsp
    Trader Joe's Vanilla coconut milk, 1.5 cup
    Zucchini, 1 cup, sliced (remove)
    Yellow Sweet Corn, Frozen, 1 cup kernels - let thaw
    Bell Pepper - Red - 1 large
    Cilantro, raw, 1/4 cup, chopped fine
    Onions, raw, 1/4 cup, chopped

Tips

Make sure that you give it plenty of time to cook on the bottom before flipping. The edges will show signs of drying. It's good with salsa on top.


Directions

Combine flax meal with the water and set aside. Combine remaining dry ingredients. Chop all of the veggies. Add milk and flax mixture to the corn flour mixture and whisk to combine. All all of the veggies and the cilantro and mix well. Heat a nonstick skillet on medium low to medium heat and I used Pam olive oil spray to coat the pan. I used a tablespoon and picked up a heaping amount and dropped it into the pan, flattening it with the spoon. It came out to twelve patties for me.

Serving Size: Makes 12 servings of two patties each
