Introduction

Ingredients

    1.5 C. Raisin Bran Cereal
    1 C. 2% (or lighter) milk
    4 Tbs. canola oil
    2 eggs, beaten
    1 tsp vanilla extract
    1 medium apple, peeled and grated
    1 snack cup of unsweetened applesauce
    2 1/2 c. flour
    3/4 c. brown sugar, unpacked
    2 1/2 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp. cinnamon

Tips

You can add 1/2 c. chopped walnuts, but that will change the nutritional value.


Directions

Preheat oven to 350 degrees. Mix all ingredients together. Place ladlefuls of mix into greased muffin tins. Bake for 20-22 minutes, until golden and toothpick comes out clean. Cool slightly before serving.
