Ingredients

    1 large apple - chopped ( I left skin on and used a pink lady apple)
    1 cup whole wheat flour
    1 cup old fashion rolled oats
    1/2 - 1 cup unsweetened applesauce
    4 tbsp peanut butter ( would have used almond but were out so I used Peter pans whipped)
    1/4 cup egg whites
    1-2 tbsp cinnamon
    1/2 tsp baking soda
    1/2 tsp baking powder
    4 oz of almond milk. ( I used light vanilla)
    I also added 5 packets of stevia.

Directions

Preheat wheat oven to 300 degrees. Grease a muffin tin (I use coconut oil). In one bowl, mix all dry ingredients. In another bowl add the chopped apple, applesauce, peanut butter and egg. Mix. Combine the two mixtures. Spoon onto muffin tin & bake for 20 minutes or until the toothpick comes out clean.

Serving Size: Makes 14 muffins
