Ingredients

    9 in pie shell
    1 1/2 cups shredded mozzarella cheese
    5 plum or 4 large tomatoes
    1 c loosely packed fresh basil
    4 cloves of garlic
    1/2 cup of mayonnaise
    1/4 cup of freshly grated parmesan cheese
    1/8 tsp ground white pepper
    Additional basil for garnish

Directions

Bake pie shell. spread 1/4 cup of mozzarella on the baked pie crust. Cut tomatoes in wedges, drain and place on top of cheese. Process garlic and basil (coarsely chopped) and sprinkle over tomatoes. In separate bowl, combine the reset of the mozzarella cheese, mayonnaise, Parmesan cheese and pepper. Spoon over pie and evenly spread. Bake 35-40 minutes at 375.
