Introduction

Simple, quick, easy low-carb treat Simple, quick, easy low-carb treat
Number of Servings: 36

Ingredients

    2 cups peanut butter
    2 eggs

Tips

You might try chunky style peanut butter for a bit more texture. I'd like to try this with almond butter!

Directions

Preheat oven to 375. Mix eggs and peanut butter with an electric mixer until smooth. Roll scant tablespoonfuls in your hands until it becomes smooth and soft. Place each ball on a baking sheet lined with parchment. Use a fork to flatten the cookies. Bake for 10-20 minutes depending on your oven or until the cookies are nice and firm. Remove to a wire rack and cool for about 10 minutes; cookies harden up once cooled.

Serving Size: Makes 36 small cookies or 24 larger (adjust nutrition data accordingly)

Dry, crumbly ,and they are very Bland. Will probably end up playing with it in the future to make them better. I understand they are only 2-ingredients so what should I have expected shouldn't have been that great. I still feel they could have been a bit better. - 10/19/18
