Introduction

This is an awesome meat-free recipe that you can use for so many different dishes.
Use as taco filling.
Mix with rice.
Form into patties and cook as burgers.
Put into peppers and bake 15 minutes at 425 covered in tomato/marinara sauce.
Use in chili.

Ingredients

    3 TBS olive oil
    1 cup COOKED Quinoa
    ½-1 onion diced
    2 cloves garlic (1 tsp)
    3 cups mushrooms, diced
    1 TBS Cumin
    2 TBS Chili Powder
    ¼ Tsp Salt
    Cayenne Pepper to Taste
    Garlic Salt to Taste
    4 TBS Lemon Juice (Juice of 2 Lemons)
    ½ Can Black Beans
    2 Cups Shredded Spinach
    ½ Cup Chopped Walnuts
    ½ Cup Bread Crumbs

Tips

I guessed at the prep/cook times. I haven't timed it.


Directions

Sautee Onion and Garlic in Olive Oil in Skillet on Medium Heat. When onions are translucent and slightly yellowed, reduce heat to medium-low.
Add Mushrooms, cumin, chili powder, salt, cayenne, garlic salt, lemon juice, and black beans. Saute until mushrroms are tender.
Add spinach and stir. Once spinach is cooked, reduce to low heat.
Add walnuts and bread crumbs. Mix well.
Add cooked Quinoa. Mix well.
