Nutritious and delicious, these energy balls are the perfect snack for that long hike or when you need a boost of energy. Nutritious and delicious, these energy balls are the perfect snack for that long hike or when you need a boost of energy.

Ingredients

    1 cup dry oatmeal
    1/2 cup (or 8 tbsp) dark chocolate or carob chips
    1/2 cup peanut or other nut butter
    1/2 cup ground flaxseed
    1/3 cup pure honey
    1 tsp. vanilla extract
    2 tsp. cinnamon
    2 tbsp (or 1/8 cup) toasted coconut

Tips

Store in fridge.


Directions

Combine all ingredeints and mix well. Place misture in the fridge for 30 minutes. Remove and roll into small balls. Optional- roll balls in toasted coconut.
