Introduction

I started making these because I love the Chinese buffet, but I can't afford the calories. These are reminiscent of the green beans at our local buffet. Ingredients

    3 cups snap green beans, ends snapped off
    6 med-large crimini, white button, or baby bella mushrooms
    3 cloves of garlic, minced
    2 T extra virgin olive oil
    dash of salt

Directions

Heat the olive oil in a large frying pan or wok. Add garlic and saute until aromatic, about a minute. Toss in green beans and cover for a few minutes until they start to soften, which takes about 5 minutes on my stove, but watch it close, shaking frequently to move the beans around. Uncover and add mushrooms. Saute until desired tenderness.

Serving Size: Makes 3 hearty servings
