Introduction
This hearty chili is great any time of year and is fresh. Serve it with shredded lettuce, cilantro, avocado and lime. I ALWAYS use dried beans, but my measurements call for cooked (except lentils). Ingredients

1 T. Olive Oil
6 oz. diced onion
6.5 oz. diced zucchini
2.5 oz. diced celery
2.5 oz. diced carrot
2.25 oz. diced bell pepper, red or green or mixed
1 jalapeno or other hot pepper, seeded, stemmed and diced
2.5 oz. diced mushroom
5 cups stewed tomatoes, fresh, not canned**
2.5 cups cooked white beans
2.5 cups cooked red kidney beans
1.5 cups cooked chick peas
.25 cup dry green lentils
.25 cup dry black lentils
.25 cup quinoa
4 t. onion powder
4 t. garlic powder
1 t. oregano
2 t. parsley
1 t. coriander
1 t. cumin
1 t. paprika
5-6 drops Liquid Smoke*
.5 cup Nutritional Yeast*
2 T. cashew powder/flour*
black pepper and sea salt to taste
Directions
*Add towards the end.
** Stewed tomatoes are easy! Blanch and remove the skin and take out the seeds. Puree half of what you've got and cook it with the solid half, lightly salted, for ten minutes. I used 4.5 pounds of tomatoes for this recipe.
Sweat the onions in the oil and after about 10 minutes on low heat they should be ready for you to add the veggies. Cook for 5-7 minutes. Add tomatoes and chipotles followed by the beans, lentils and quinoa. Cook for 25-35 minutes and add seasonings and ingredients with a single asterisk.
Serving Size: Makes 13 one cup servings
