Introduction

Ingredients

    10 broiled Trader Joe's Breast Tenderloins, chopped
    14 oz. nonfat/0% Greek yogurt (I like Fage), plain
    1 cup diced celery
    1 cup seedless grapes
    1/2 c. scallions, raw, chopped
    1/2 c. Trader Joe's Wild Rice, cooked
    Tarragon, ground, 1 tbsp
    1/4 tsp salt
    Pepper to taste

Tips

You can use most any fruit - raisins, apple, apricot. I also like to add some toasted almonds. You can also sub quinoa for the rice. Serve plain or on top of greens.


Directions

Combine all ingredients and let chill a few hours or overnight.
