Introduction

Yummy alternative to your traditional chicken salad. Yummy alternative to your traditional chicken salad.
Number of Servings: 5

Ingredients

    2 Avocados
1/4 cup Kraft Olive Oil Mayo (optional)
Boned and skinned rotisserie chicken meat shredded
Juice of 1/2 a lime (more if desired)
    2 garlic cloves, minced
    2 tbsp Cilantro, chopped
    Salt and pepper to taste

Tips

Can add tomato, onion and jalapeno if desired. I serve on the side for family to add to their liking.

Can omit the mayo to save some calories or reduce the amount of avocado used. We like the added creaminess added by the mayo and the flavor.

Directions

Remove skin and bone from chicken meat and shred.

Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (Before removing from peel I cut the avocado into small cubes to make mashing easier.)

Using a fork, roughly mash the avocado. (Mash to your preferred consistancy, as chunky or smooth as you like.) Add mayo and cream together as desired. Add cilantro, garlic, lime juice and salt and pepper to taste. Mix.
