Introduction

This is as close as I can come to the recipe one of the cooks in my parent's cafe made. Ingredients

    2 Tbsp. Oil (for browning onions and meat)
    1 lb. Ground Beef, 80% lean
    2 cups Onion, chopped
    4 cups Potato, sliced thin
    1 lb bag Peas & Carrots, frozen (thawed out)
    1 can Tomato Soup (10-3/4 oz)
    1 can Cream of Mushroom Soup (10-3/4 oz)
    Salt & Pepper
    1 cup shredded cheddar cheese (2%) *optional

Directions

In a large skillet, cook onion in oil till clear. Add ground beef and cook till beef is no longer pink. Pour meat mixture into a large bowl and add peas, carrots and potatoes. Salt and pepper to taste. Gently fold all of this together. Pour both soups in to a bowl and blend. Pour the soup mix over all and gently fold soup into mixture. Pour this into a 9 x13 greased cake pan.
Bake at 350 uncovered for 45 minutes then sprinkle 1 cup of cheddar cheese on top and bake another 30 minutes.
Serving Size: Makes 8 servings.
