Ingredients

    olive oil 2 tsp - to saute squash and onion
    4 c sliced raw summer squash
    3 tbsp mayo
    2 eggs
    1/4 c parmesan cheese
    1 c cheddar cheese
    pepper
    1.5 tbsp butter melted

Directions

cook sliced squash and onion in pan til very soft. remove from heat and mash with spoon. put into bottom of 8x8x2 pan. mix mayo, cheeses, eggs, pepper, and melted butter in a bowl. pour over squash mixture and bake at 350 for 25 min
