Introduction

Originally i got this recipe from blue kitchen dot com.

Number of Servings: 3

Ingredients

    2 medium-sized yellow onions
    1/4 cup olive oil [plus extra, if needed]
    24 grape tomatoes [or 18 to 20 cherry tomatoes], halved
    salt and freshly ground black pepper, to taste
    freshly grated, good quality Parmesan cheese
    Half a box of spaghetti or any pasta desired (3 cups cooked)
    2 tsp minced garlic (and i added garlic powder before eating also. I like it really garlicky and this minced is just to add some flavor to the onions during cooking)

Tips

Forgive my cooking instructions. They are horrible. I did not try to write well.


Directions

Start the onions quite a bit before you start the water boiling. at least 15 mins. You want to keep the heat medium-low and let them slowly caramelize. Stir Frequently.

Once the onions turn translucent i added the minced garlic and some fresh ground pepper ( i did not add salt as i am on low sodium restriction but if i were going to add salt i would wait til the tomatoes are added later to help their flavor. the onions dont need it)

After they are translucent and just starting to turn a bit brown is when I start the water boiling. About 3 minutes from when you think the onions will be done add the halved tomatoes and stir frequently.

When pasta is finished cooking pour into colander and toss with some olive oil to keep it from clumping up.

Put together and sprinkle with the parmesan cheese and (if you're me) add some granulated garlic to up the flavor. :)

Serving Size: 1 cup pasta and about 1/2cup to 3/4 cup tomatos/onions
