Ingredients

1 cup whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp ground ginger
1 tsp ground nutmeg
1 tsp cinnamon
1/2 tsp ground cloves
1/4 cup brown sugar
1/2 cup egg substitute
1/2 can pumpkin
1/4 cup sugar-free apple sauce
1 cup lactose-free milk
Tips
These come out very dense with a rich, pumpkin flavor. If you want lighter pancakes, cut the amount of pumpkin and apple sauce in half.
Directions
Combine flour, baking powder and soda, and spices in a small bowl.
In a separate bowl, combine brown sugar, egg substitute, pumpkin, and apple butter. Add milk.
Add the liquid and solid together all at once and combine well with a wooden spoon (do not use an electric beater)
Heat a skillet over medium heat. Cover with non-stick cooking spray. Place mounds of batter to desired size onto skillet. Cook 2-3 minutes on each side (depending on your stove top) or until lightly browned and cooked through.
Serving Size: Makes ~5 servings
