Ingredients

    4 medium sized bananas
    2 large eggs
    3/4 c. Splenda
    1/4 c. honey
    1/2 t salt
    1 t. baking soda
    1/2 c. unsweetened applesauce
    2 t. ground cinnamon
    1 t. ground cardamom (optional)
    1 t. vanilla extract

    1 c. whole wheat pastry flour
    1 c. spelt flour
    1/4 c. ground golden flax seed

    1 c. frozen Maine blueberries

Tips

I often triple the recipe and make two 9x13 pans for parties. If using a 9x13 pan, cut baking time to 75 minutes and test with toothpick for doneness.


Directions

Puree bananas, eggs, Splenda, honey, applesauce, salt, baking soda, cinnamon and cardamom in a blender or food processor. Add liquid mixture to dry ingredients and blend thoroughly until there are no lumps. Add frozen blueberries. Pour mixture into greased loaf pan. Bake at 325 for 90 minutes.

Serving Size: 16 pieces (8 slices, cut in half)
