Introduction

Lower Sodium and better than any canned soup! Lower Sodium and better than any canned soup!
Number of Servings: 6

Ingredients

    2 Tbs. Extra Virgin Olive Oil
    1 Tbs Unsalted Butter
    1 Large White Onion
    1 Large Clove of Garlic, smashed
    2 Tbs. All Purpose Flour
    3 Cups Lower Sodium Chicken Broth
    28 oz. can Whole Peeled Plum Tomatos, pureed (include juice)
    1 1/2 tsp Splenda
    1 tsp. Ground Thyme
    Dash of Salt and Pepper
    1 Tbs. Dried Basil, crushed

Tips

Puree in batches to prevent steam build up in the blender.


Directions

1) Heat oil and butter over meduim heat.
2) Add garlic and onion and saute until translucent
3) Add flour, coating garlic and onion.
4) Add tomatos, broth, sugar, and seasonings and bring to a simmer over medium high heat.
5) reduce heat to low, cover and simmer for 40 minutes.
6) Puree in batches in a blender to mix and thicken, and serve!
