Ingredients

    6 oz 93%lean ground beef
    4 c low or no sodium tomato juice
    32 oz fat free low sodium beef broth
    14.5 can diced no salt tomato
    16 oz bag frozen mixed vegetables
    1 medium onion
    1 c fresh cabbage
    1 c fresh celery
    2T swiss chard ground
    1 c water
    1 bay leaf
    1.5 c fresh potato (low carb sunlite)

Directions

brown beef, add everything except frozen vegetables and potato, simmer 45 min, add frozen vegetables and simmer 10 min., add potato simmers 20 additional min.
