Ingredients

Wholemeal Self raising flour,
195 gram(s) 1 1/2 cups
Bananas, 2 medium
Sugar, 1/4 cup
Egg, 1 large
Vanilla extract, 1/2 tsp
Applesauce 1/4 cup
Crushed Pineapple in 100% Pineapple Juice, 1 cup
Walnuts, 1/5 cup, chopped
Cinnamon, ground, 1 tsp
Nutmeg, ground, 1/4 tsp
Ginger, ground, 1/4 tsp
Tips
You can make a cream cheese frosting to add to the top of each muffin (yum) but this will increase the calories in each muffin considerably.
Directions
Grease muffin pan and line with muffin cases.
In a bowl, mash bananas, add sugar, egg, vanilla extract, cinnamon, nutmeg and ginger. Mix well. Add applesauce. Slowly add flour to wet mixture. Blend well.
Add crushed pineapple and chopped walnuts to mixture.
Scoop mixture into muffin cases.
Bake at 180 degrees Celcius for 20 minutes. Let cool before serving.
