Ingredients

    2 pounds red potatoes, diced
    2 Tbsp extra virgin olive oil
    salt and pepper to taste
    Mrs. Dash to taste - about 1/2 tsp
    Garlic powder to taste - about 1/2 tsp

    1/2 cup chopped onion
    1/4 cup sun-dried tomatoes, chopped
    2 Tbsp honey mustard
    1/2 cup Kraft Miracle Whip Light (or mayo)

Tips

Add other veggies like celery and sweet peppers or eggs if you like.


Directions

Preheat oven to 350 degrees.

In a large mixing bowl, combine diced potatoes, EVOO, salt, pepper, Mrs. Dash and garlic powder. Place on a foil-lined baking sheet prepared with baking spray. Roast in oven until potatoes are tender, about 30 minutes.

Return roasted potatoes to mixing bowl and add remaining ingredients. Refrigerate.
